Basic Cornbread on the Grill

This is a basic crumbly cornbread that was baked simply and quickly on the grill.

Ingredients
  

  • 2 Tablespoons bacon grease
  • 1 cup corn meal
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk or buttermilk

Method
 

  1. Light your bbq to medium high heat. Place bacon grease in your cast iron skillet with and let melt while preparing ingredients.
  2. Whisk together the cornmeal, baking powder, baking soda and salt in a medium bowl.
  3. Whisk egg in a small bowl until frothy, add milk.
  4. Add milk and egg mixture to the dry ingredients and stir.
  5. Once the bacon grease is smoking, pour the batter into the cast iron skillet. It will on the runny side.

  6. Grill on medium high heat for approximately 10 minutes, or until the edges are golden brown, and the center is firm.

Notes

This recipe really takes into account the essence of corn meal. By baking it with simple ingredients outside on the grill, it brings to mind the history and tradition of the grain.  Since it is so simple, it would do well to add something special such as honey butter.
